Indian Style Chicken Soup

Ingredients:
2 tablespoon vegetable oil
2 large onions, peeled and cut into small pieces

cloves garlic, minced 
1 cup green lentils
2 medium sweet potatoes, peeled and cut into ½-inch cubes
1 leek, cut into thin rings
1 tablespoon ground cumin
½ teaspoon ground cinnamon
1 tablespoon ground ginger
2 tablespoons salt
1 teaspoon pepper
3 boneless skinless chicken breasts, cut into 1-inch cubes
8 cups chicken broth

Directions:
  1. Heat oil in a large pot over medium high heat. 
  2. Add onion and sauté 5 to 7 minutes. 
  3. Add minced garlic and sauté 2 minutes more or until fragrant and translucent. 
  4. Add lentils, sweet potato, leeks, cumin, cinnamon, ginger, chicken and broth and bring to a boil. 
  5. Reduce to a simmer and add salt and pepper. 
  6. Cook 30 to 40 minutes or until lentils are tender.
  7. Add more salt and water as needed
  8. Serve with garlic toast.
